The Pappas family is synonymous with Houston dining, with a history stretching back to their grandfather, H.D. Pappas, who emigrated from Greece in 1897. Brothers Chris and Harris Pappas (the third generation) built the modern empire, which is legendary for its vertical integration—they own their own delivery trucks, employ their own electricians, and source their own seafood to ensure absolute consistency. Brands like Pappadeaux and Pappasito’s are often cited as the gold standard for high-volume, high-quality Cajun and Tex-Mex cuisine.

Despite their massive size (over 90 locations), Pappas Restaurants remains privately owned and intensely focused on training and retention, with many staff members staying for decades.
